Jogurt (kozji jogurt) je hranilo, ki ga ljudje v posameznih obmo\u010dji sveta uporabljajo \u017ee tiso\u010dletja. Z fermentacijo mleka s posebno kulturo so predniki dosegli nekaj izbolj\u0161av pri uporabi \u017eivalskega mleka. Podalj\u0161ali so \u010dasovno uporabnost mleka, zmanj\u0161ali vsebnost laktoze v izdelku in pove\u010dali njegovo hranilnost napram mleku. Zna\u010dilno za kozji jogurt je podobno kot za kozje mleko, da je maj alergeno od kravjega mleka.<\/p>\n\n\n\n

Jogurt <\/a>je narejen iz fermentiranega mleka, s pomo\u010djo probioti\u010dnih bakteriji Lactobacillus bulgaricus<\/em> in Streptococcus thermophilus<\/em>. To so dobrodejne bakterije, ki pomagata ohranjati zdravo prebavo. Probiotiki naj bi pomagali la\u017eje prebavljati mle\u010dni sladkor (laktozo) in obi\u010dajno lahko jogurt jedo tudi tisti, ki ne prena\u0161ajo dobro mleka.<\/p>\n\n\n\n

Priprava in potek izdelave za kozji jogurt<\/h2>\n\n\n\n

Na\u0161 jogurt (SELI jogurt \u2013 SYOG<\/a>) je izdelan s fermentacijo mleka, ki je me\u0161anica kravjega in kozjega. \u017divali se v \u010dasu odprte sezone pasejo na kmetiji in u\u017eivajo rastline, ki so plod naravnega produkta brez<\/strong> pospe\u0161evanja rasti z razli\u010dnimi umetnimi gnojili. Tudi \u017eivalim ne<\/strong> dodajamo krmil, ki bi umetno pospe\u0161evala mle\u010dnost. Fermentacija poteka z visokokakovostnimi bakterijami, ki so za masovno proizvodnjo absolutno predraga.<\/p>\n\n\n\n

Fermentacija potek v steklenih posoda in jo ne pospe\u0161ujemo, da bi dosegli ve\u010djo \u010dasovno produktivnost. Z me\u0161anico mleka dosegamo kompaktnost jogurtove strukture in prijetno blagi okus. Seveda se tako struktura kot okus preko pa\u0161ne sezone spreminjata. Ta sprememba je odvisna od vremena in od pa\u0161e, ki jo \u017eivali v danem trenutku imajo na voljo. Spremembo je mo\u010d zaznati tudi, ker je to mleko produkt manj\u0161ega \u0161tevila \u017eivali, ki \u017eivijo in se pasejo na skupnem prostoru.<\/p>\n\n\n\n

Kozji jogurt lahko u\u017eivate kot samostojno jed, da bi dosegli razli\u010dne okuse in potrebe pa ga lahko kombiniramo z razli\u010dnimi dodatki, kot so sadje, mleta semena, za\u010dimbe ali pa ga uporabimo za teko\u010do osnovo zelenjavnih smutijev. <\/p>\n\n\n\n
